hydrolysis of alpha 1-4 linkages of
starch. Activity: 800 KNU/g (1 KNU
is the amount of enzyme necessary
to break down 5.6 g of starch in one
hour). Optimum temperature: >50°C.
Optimum pH: 5.5. Recommended
concentration for use: 0.005 to
0.01 mg/ml at pH 6.0 and 50°C.
STORAGE: vials to be stored at +4°C .
